Our interpretation plan for the former Carlton & United Brewery site in Carlton is installed on the ground floor of the Malt Store in Swanston Street, and is one result of a series of successful collaborations with David Huxtable of design company LookEar.
The display illustrates the history of brewing on the whole site. It also explains the role of the Malt Store (1904) and the bluestone buildings facing Bouverie Street, all of which have been retained as part of the Swanston Square development. The Malt Store has been adapted for retail, restaurant and office use, with conservation works by Lovell Chen (Malt Store conservation works).
Our heritage team researched the information and established the framework for LookEar’s exhuberant design and implementation work.
